How to make low carbohydrate breads

When the Atkins diet was first released, there were recipes available for making low carbohydrate breads. Unfortunately, those didn’t taste great and they weren’t always easy to make.

Of course, these days it’s relatively easy to buy low carbohydrate breads from your local grocery store. These often contain gluten free wheat, soy or flax seed (sometimes called linseed). Another way they reduce the carbohydrate levels is to replace the sugar content with an artificial sweetener.

What store-bought brands of low carbohydrate breads don’t tell you is that the way they calculate their carbohydrates probably isn’t the same way you’d calculate them.

You see, they use a ‘net carb’ calculation which isn’t always accurate. For example, they will add up the number of carbohydrates in the bread and subtract the amount of fiber in that bread to create a ‘net carb total’. So if that slice of low carbohydrate bread contains 14 grams of carbohydrates and 10 grams of fiber, the net carb total will be 4 grams. This is enough for them to label the products as low carbohydrate breads.

The reason for this is because your body is unable to convert fiber to energy. Fiber essentially passes through your body in it’s original state, absorbing water along the way.

The disappointing thing with low carbohydrate bread recipes is that they contain heavy cream, butter and ‘Splenda’, or artificial sweetener. While the bread you make might be low in carbohydrates, it is higher in calories than you might think.

So here are two recipes for true low carbohydrate breads

This recipe is quick, easy and convenient. It also tastes better than some of the varieties available from the store and contains fewer calories than those too.

Recipes for Low Carbohydrate breads

Ingredients:

¼ cup flaxseed (linseed) meal
1 egg
½ teaspoon baking powder
½ tablespoon butter
½ tablespoon olive oil

Method:

Mix all the ingredients in a microwave safe bowl, stirring until all the ingredients are well-blended. When everything is mixed well, place the bowl in the microwave and heat for one minute on high.

Take the dough out of the bowl and cut it in quarters. Mold or roll each piece into a flat bread shape and put into a sandwich toaster. Toast it on low until it’s toasted nicely.

This recipe works best as a toasted slice, so spread with a little unsalted butter and top with slices of tomato for a healthy, low calorie, low carb bread option.

Low Carb Herb Bread Recipe

This recipe has a little more flavor than most other low carb bread recipes you’ll find out there, thanks to the addition of some lovely herbs.

Ingredients:

2 cups flaxseed (linseed) meal
1 tablespoon baking powder
½ teaspoon baking soda
½ cup water
1/3 cup olive oil
5 eggs
Pinch of salt
1 teaspoon minced garlic
1 teaspoon dried basil leaves
½ teaspoon dried parsley
½ teaspoon onion powder
¼ teaspoon dried oregano

Preheat your oven to 350F (180C). Line a baking sheet with cooking paper or a silicone baking sheet.

Mix together flaxseed meal, baking powder and baking soda in a large bowl. Create a well in the middle of the dry ingredients and put the water, eggs and oil into the center. Mix the ingredients well. Stir in the garlic, basil, parsley, onion powder and oregano and then leave the dough to one side for 10 minutes to rest.

Spread the batter onto your baking sheet so it’s approximately ½ inch (1cm) thick. This should end up approximately the thickness of a slice of bread.

Bake the slice in the oven at 350F (180C) for 20-25 minutes. Then remove and allow to cool on the baking sheet. When the bread has cooled enough cut the slice into squares that will become your bread slices.

Another excellent product for those on a low carb diet is an amazing noodle that has been consumed in Asia over two thousand years.
